Buttermilk Blueberry Puff

Ingredients
  

  • 5-6 large croissants cubed approx. 10 cups
  • 3 cups fresh blueberries
  • 1/2 c. unsalted butter softened
  • 1/2 c. sugar
  • 3 eggs at room temp
  • 1 c. heavy cream
  • 1/2 c. buttermilk
  • 1 Tbs. vanilla
  • 1 tsp. salt
  • 1 Tbs. coarse sugar for topping

Instructions
 

  • Preheat oven to 375. Grease a small square baking dish withbutter. Spread croissant cubes evenly in baking dish and add blueberries.
  • Beat the 1/2 c. butter and 1/2 c. sugar with a mixer until creamy.
  • Beat in eggs. Add cream, vanilla, buttermilk and salt. Texture may appear curdled. Pour over croissants and blueberries in the dish.
  • Sprinkle with coarse sugar.
  • Bake at 375 for 30 minutes. Enjoy warm!
