Buttermilk Blueberry Puff

Ingredients

large croissants
cubed approx. 10 cups

cups
fresh blueberries
1/2
c.
unsalted butter
softened
1/2
c.
sugar
3
eggs
at room temp
1
c.
heavy cream
1/2
c.
buttermilk
1
Tbs.
vanilla
1
tsp.
salt
1
Tbs.
coarse sugar
for topping
Instructions
Preheat oven to 375. Grease a small square baking dish withbutter. Spread croissant cubes evenly in baking dish and add blueberries.
Beat the 1/2 c. butter and 1/2 c. sugar with a mixer until creamy.
Beat in eggs. Add cream, vanilla, buttermilk and salt. Texture may appear curdled. Pour over croissants and blueberries in the dish.
Sprinkle with coarse sugar.
Bake at 375 for 30 minutes. Enjoy warm!
