Yellow Plum Clafoutis

Ingredients
  

  • 3 eggs
  • 1 cup milk
  • 2 Tbs. melted butter
 1 Tbs. brandy
  • 1 tsp.

    almond extract


  • 1/2 c. sugar + 1 Tbs. sugar
  • 1/4 cup flour
  • 8-10 small yellow plums
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 375. Lightly butter a 9” pie plate or 8×8 baking dish. Dust bottom with 1 Tbs. sugar.
  • Whisk eggs, milk, melted butter, brandy, almond and vanilla extract. Add flour and remaining 1/2 cup sugar and beat until smooth and lump-free.
  • Halve and pit the plums. Arrange them on the baking dish, cut side down. Pour in the batter and try not to disturb the arranged fruit.
  • Bake for 35-40 minutes or until the batter is set on the edges and just slightly wobbly in middle.
  • Let cool for 10 minutes and serve with a light dusting of powdered sugar.
