Yellow Plum Clafoutis
Ingredients
- 3 eggs
- 1 cup milk
- 2 Tbs. melted butter 1 Tbs. brandy
- 1 tsp.
almond extract
- 1/2 c. sugar + 1 Tbs. sugar
- 1/4 cup flour
- 8-10 small yellow plums
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 375. Lightly butter a 9” pie plate or 8×8 baking dish. Dust bottom with 1 Tbs. sugar.
- Whisk eggs, milk, melted butter, brandy, almond and vanilla extract. Add flour and remaining 1/2 cup sugar and beat until smooth and lump-free.
- Halve and pit the plums. Arrange them on the baking dish, cut side down. Pour in the batter and try not to disturb the arranged fruit.
- Bake for 35-40 minutes or until the batter is set on the edges and just slightly wobbly in middle.
- Let cool for 10 minutes and serve with a light dusting of powdered sugar.
