Buttermilk Blueberry Puff
Ingredients
- 5-6 large croissants cubed approx. 10 cups
- 3 cups fresh blueberries
- 1/2 c. unsalted butter softened
- 1/2 c. sugar
- 3 eggs at room temp
- 1 c. heavy cream
- 1/2 c. buttermilk
- 1 Tbs. vanilla
- 1 tsp. salt
- 1 Tbs. coarse sugar for topping
Instructions
- Preheat oven to 375. Grease a small square baking dish withbutter. Spread croissant cubes evenly in baking dish and add blueberries.
- Beat the 1/2 c. butter and 1/2 c. sugar with a mixer until creamy.
- Beat in eggs. Add cream, vanilla, buttermilk and salt. Texture may appear curdled. Pour over croissants and blueberries in the dish.
- Sprinkle with coarse sugar.
- Bake at 375 for 30 minutes. Enjoy warm!
